6. Southwestern Corn Chowder

4 c corn kernels
1 c cashews
1 c water
2 cloves garlic, minced
2 ribs celery, chopped
1 red bell pepper, chopped
1 tomato, chopped
½ yellow onion, chopped
juice from 3 limes
2 T olive oil
2 t chili powder
1 t cumin

2 c corn kernels
1 avocado, peeled and diced
½ bunch cilantro, leaves only, chopped

Puree first twelve ingredients in blender. Put in a bowl and fold in 2 cups corn kernels, avocados and cilantro.
